A Satisfying Summer Vegetable Stew to Enjoy the Fresh Harvest
The summertime is the perfect time to make delicious and satisfying soups and stews with the freshest produce that is in season. Here in Southern New Jersey, every summer we enjoy a wonderful variety of fruits and vegetables grown locally sold at farmers markets, roadside stands…or maybe even grown in your backyard if you’ve got a green thumb! The climate here is perfect for crops like tomatoes, zucchini, summer squash, cabbages, corn and much more.
This is a delicious soup great for the winter months – and as a twist on something “Irish” for St. Patrick’s Day.
Parsnip and Turnip Winter Stew
Vegetable soups and stews can make for very satisfying home-cooked meals, even in the winter months when fresh produce is not as readily available as in the spring or summertime. Winter is a perfect season to enjoy hearty root vegetables like parsnips and turnips, often overlooked yet full of nutrition and great taste.

Well, September is almost over and my summer garden is fading away. As such I’ve been using up and enjoying the last of my tomato harvest in as many different ways as possible. First was a nice and spicy vegetable soup from one of my favorite little cookbooks, Perfect Mexican. This was really satisfying and I made enough to enjoy for several days, almost all with local squash, potatoes and corn along with my own tomatoes.
