About the Author
The "South Jersey Foodie" is Nicole Pellegrini, sometimes known as sockii. She enjoys life as a writer, artist, webmaster, crafter and avid food-lover living in some of the last vestiges of active farmland in Gloucester County, New Jersey. She shares her home with her partner David, a podiatrist in Woodbury NJ and their six cats: Peanut, Norman, Sammo, Mischief, George and Benny.I believe in enjoying life - and that includes enjoying as many different kinds and styles of food as possible. I am an omnivore with a personal passion for small, sustainable, ethical farming and natural foods. I have little patience for the "Food Police" or those who advocate that one dietary plan is the only "right" one for everyone. Find your personal balance and conscience; make food a joy in your life - that's my motto.

A Satisfying Summer Vegetable Stew to Enjoy the Fresh Harvest
The summertime is the perfect time to make delicious and satisfying soups and stews with the freshest produce that is in season. Here in Southern New Jersey, every summer we enjoy a wonderful variety of fruits and vegetables grown locally sold at farmers markets, roadside stands…or maybe even grown in your backyard if you’ve got a green thumb! The climate here is perfect for crops like tomatoes, zucchini, summer squash, cabbages, corn and much more.
What’s been cooking…the summer edition
Well, it’s been a while since I’ve checked in, mostly as July was a horribly busy month with some serious ups and downs. One of the downs was me being out of commission with a bad summer bug for several weeks. I couldn’t even taste anything at all for most of a week – what a horrible waste in the middle of the New Jersey fruit and vegetable season!

A Summer Squash and Tomato Recipe That’s Fast and Delicious!
One of the best things about living in Southern New Jersey is our farmers, and the wonderful array of fresh local fruits and vegetables available every Spring through the Fall. I spend many an afternoon driving from one small farm stand to the next, planning my meals around whichever garden delights have just been brought in from the fields that day: gigantic ripe tomatoes, sweet white corn, juicy white nectarines or peaches, eggplant, asparagus and more. With so much available that’s fresh and delicious, summer especially is a wonderful time to enjoy vegetarian meals that are super fast and extremely healthy.
