What’s for Dinner: Lemongrass Scampi with Fresh Pasta

After being on the road (again) for another week, I finally had a few days at home to catch up on cooking and other household projects. Yesterday I was in the mood to make a fresh batch of pasta from my beloved Lillo Due Professional Extruder; I know I owe friends some pasta I promised to send out around the holidays but I’m still working on perfecting drying for long-term storage and shipping. In the meantime, that means I get to make lots of pasta for myself and the sweetie, who never complains when it’s pasta night.

One salad that especially caught my eye on that page was Tony’s Strawberry, Golden Pineapple & Coconut Farro Salad. There was no actual recipe given, but I thought I could use it as inspiration for coming up with a tropical-style shrimp and farro salad of my own.

A Simple Stir Fry for Shrimp and Summer Vegetables

Shrimp Stir Fry with Bok Choy and Wax BeansThis summer I decided to try growing bok choy (Chinese cabbage) in my vegetable garden, to great results. Indeed, if anything I now have an overabundance of bok choy to eat up quickly, and other fresh summer vegetables are never in short supply here in Southern New Jersey. Checking out one of my favorite roadside farmstands the other day I found some beautiful bring and yellow wax beans that were just too pretty to pass up. But what to prepare for dinner with bok choy and wax beans? “Easy!” I realized. “I’ll come up with a stir fry!”
