The divine glory that is pork belly.

Yes, so. I know pork belly has been one of the “it” foods for a while in foodie circles. I’ve had it in a restaurant or two. I’ve liked it. I liked it enough that when we had our first pig butchered in the fall of 2011, I asked to have some un-smoked pork belly set aside for me. The same for the second pig we had done last year, yet I just never got around to cooking it…until now. With another pig to pick up next week, I have to finish off some of the older meat in the freezer (which is still all in perfectly fine shape thanks to the excellent sealing/wrapping from our butcher). So I decided it was time to brave the pork belly.

Another excellent meal at Tavro 13 in Swedesboro, New Jersey

This past week the sweetie and I had the chance to dine at Tavro 13 again, which I had enjoyed tremendously on our first visit there just a few weeks back. Once again everything was outstanding and it was wonderful to be able to try some more dishes on the menu, especially as we had a guest with us as well so we could really sample a lot of things.

Nothing fancy. Just damn good.

I’m slowly – ever so slowly – working my way through my copious fresh pork bounty (this reminds me I need to render some lard this weekend as I’m running low and promised a fresh batch to someone next week.) In any event, the other night I defrosted some pork chops and despite the heat was determined to get them on the grill.

Sweet and Sour Baked Pork Shoulder Steaks

A couple weeks ago I took my first stab at cooking pork shoulder steaks, with less than completely successful results. The meat had a lot of flavor, but was still tough and chewy. So I wanted to try a different technique for cooking the steaks this time, and decided upon slow oven braising. Tangy Sweet and Sour Pork Shoulder Steak Bake, a recipe from food.com, looked simple yet promising. I cooked half the recipe amount as I was preparing it for two, not four (or more). Otherwise I followed all of the steps and ingredients exactly.
