About the Author
The "South Jersey Foodie" is Nicole Pellegrini, sometimes known as sockii. She enjoys life as a writer, artist, webmaster, crafter and avid food-lover living in some of the last vestiges of active farmland in Gloucester County, New Jersey. She shares her home with her partner David, a podiatrist in Woodbury NJ and their six cats: Peanut, Norman, Sammo, Mischief, George and Benny.I believe in enjoying life - and that includes enjoying as many different kinds and styles of food as possible. I am an omnivore with a personal passion for small, sustainable, ethical farming and natural foods. I have little patience for the "Food Police" or those who advocate that one dietary plan is the only "right" one for everyone. Find your personal balance and conscience; make food a joy in your life - that's my motto.

Chicken Tortilla Casserole
A Satisfying Casserole Dinner for the Entire Family
A baked casserole is always a favorite weeknight meal, especially in the colder months when it’s nice to heat up the kitchen with a soothing and hearty meal. Mexican-inspired tortilla casseroles are a fun change of pace from more typical noodle, rice, or potato-based casserole dishes. They’re also great for using up those packages of tortillas in the fridge or pantry that might not be the freshest; bake them in a casserole and they’ll absorb all the delicious flavors of your other ingredients, as well as crisp up nicely on the top!

BBQ Hot Dog Casserole
This is an easy and satisfying casserole dish that’s a great way to dress up ordinary hot dogs!
I love cooking casseroles, especially when I need to make a hearty meal that will feed a crowd, or simply use up various odds and ends in my fridge and cupboard. I also love taking old fashion casserole recipes of – let’s face it – dubious quality and turning them into something more exciting, delicious, and perhaps also health conscious. My BBQ Hot Dog Casserole recipe is one such modern twist on a classic favorite.
Kielbasa, Sauerkraut and Potato Casserole
This warming casserole is perfect for the wintertime, and a tribute to my Polish heritage.
Kielbasa, sauerkraut and potatoes – mention these three foods to me and I just go “mmmmmm”.
