I made this recipe over the weekend and quite liked it. Halibut is one of my favorite fishes which I’ve only recently begun really experimenting with. Usually I cook it Italian style, very simply pan-sauteed with lemon, olive oil and parsley (following a recipe from Marcella Hazan), but since I had so many great summer veggies to eat up, I wanted to do something a little more colorful. Hence, this Brazilian-inspired fish stew with coconut milk over rice. It was very filling and satisfying!
