Relaxing Sundays, Tomato Feasts
Sunday was a nice relaxing day for watching the Olympics and trying to use up some more of those glorious fresh garden tomatoes. For lunch, a simple yet delicious mixed tomato pizza with mozzarella and basil hit the spot…
Then it was time to use up some of my San Marzano tomatoes which were getting almost too ripe. So I oven-roasted them for an hour and a half with just salt, pepper, olive oil, balsamic and a few crushed garlic cloves.
Most of these will end up in pasta sauce tonight. But I tossed some in with a few ears of raosted corn, jalapeno, and purple beans for a quick Corn-and-Tomato salsa at dinnertime.
Had this for dinner along with some fresh fried tortilla chips (prepared in my home rendered lard, of course) and citrus-grilled lobster tails.
Is there anything that can match the glory of summer food? I don’t think so. I will weep when winter comes this year.
