My untraditional 4th of July “Cook-Out”
Caramelized Onion and Bacon Pizza
Corn and Purple Bean Salad
Since I’d just done a massive seafood BBQ the day before with my mom, I decided to stay “indoors” on the 4th and just do up a really nice pair of pizzas for the sweetie and I instead. (You know I love making pizza at home!
) Since I’ve got so much great bacon from our recent farm pork bounty
, and all my herbs and greens are going crazy in the garden, I made Caramelized Onion Pizza with Bacon, San Marzano Tomatoes, Mixed Cheeses, Wild Arugula and Basil. I slow cooked the onions in butter on the stove until I couldn’t stand the wonderful aroma any longer and was ready to start eating them before even putting them on the pie.
It’s also sweet corn season here in South Jersey and I’ve got purple beans growing like crazy in my garden. Since the beans lose their lovely purple color when cooked, I’ve mostly been enjoying them raw in salads and salsas. As a cool side to go with my pizzas, I made a marinated sweet corn and purple bean salad, adding some lime juice, cilantro (from the garden), olive oil, sea salt, Mexican chili powder and jalapenos. The sweetie really loved this so I’ll have to remember exactly how I made it for the next time!
