My “Easy” Paella Recipe
Paella is one of those great Spanish dishes that almost everyone loves, yet not many want to bother preparing at home. With the many ingredients needed and large traditional paella pan, it seems like a difficult and complicated dish to assemble.
Yet growing up, my grandmother made a wonderful Easy Paella prepared on range top and in the oven. It’s not exactly traditional, but it has many of the expected flavors of paella and is just so satisfying and tasty. Every time I make the recipe, it’s an instant flashback to my childhood. I remember liking the dish even better the next day as leftovers, when grandma would reheat it in the oven, getting the rice nice and crispy on the edges and after all the flavors had more time to merge together.
