Shrimp Stir Fry with Bok Choy and Wax Beans

This is a recipe I came up with earlier this summer, when my bok choy started growing out of control. I needed to eat some up – fast! And I also had some lovely wax beans from one of the local farmstands to try out.

  1. Bok Choy is a nice substitute for onions… wherever you want something crunchy, the Bok Choy stalk seems to never soften. And no strong taste. No taste at all, in fact.
